A little work but you'll be rewarded with every bite you take of this succulent chicken, highly seasoned and glazed with rum and coffee.

2 1/2 tablespoons brown sugar blend (such as SPLENDA)
2 tablespoons ketchup
2 tablespoons dark rum
1 lime , juiced
1 tablespoon butter
2 teaspoons finely chopped ginger
1 teaspoon NESCAFÉ TASTER'S CHOICE 100% Pure Instant Coffee Granules
1/8 teaspoon ground allspice
4 (about 1 1/4 pounds total) boneless, skinless chicken breast halves
2 large cloves garlic , crushed
1 teaspoon olive oil
1/2 teaspoon salt
1/8 teaspoon ground black pepper

COMBINE sugar blend, ketchup, rum, lime juice, butter, ginger, coffee granules and allspice in small saucepan. Bring to a gentle boil; stir until coffee and sugar blend are dissolved. Remove from heat; set aside.

TRIM chicken of any visible fat. With sharp knife, make two diagonal slits about 1/2-inch deep on the top side of each breast.

COMBINE garlic, oil, salt and pepper in small bowl. Rub mixture all over chicken. Arrange chicken slit-side-up on rack in shallow baking pan. Brush chicken with glaze; reserve remaining glaze. Refrigerate for 30 minutes.

PREHEAT broiler.

BROIL chicken for 5 minutes. Turn chicken over; coat with reserved glaze. Broil for an additional 4 to 5 minutes. Turn chicken over again; coat with glaze. Broil for an additional 2 minutes or until tops are sizzling and brown.

Comments: This chicken was excellent! My husband is actually from the Caribbean, and he loved it, and my 2 year old cleaned her plate, and that's saying something! It did need a little longer to cook than noted on the thicker pieces, but it was sooo amazingly tender. I listened to earlier reviews and nixed the coffee, and I used twice the amount of fresh garlic called for. I used pre-squeezed lime juice because I had it on hand. It was perfect, but I want to make it even better. Next time, I'm going to add more brown sugar for a thicker glaze, and use fresh lime to get some of the pulp in there. Don't skimp on the rum! I was afraid because it smelled so strongly at first, but now I wish I'd used more. It was polished off with no leftovers and even the serving plate was licked clean!

Comments: I have made this recipe several times already and each time, it gets better and better. I omitted the allspice and ginger because I don't care for them. I have also used regular bbq sauce, as well as a Hot Pepper Chipotle Raspberry saucein place of ketchup and it still came out amazing. This is definitely a family favorite now! I tend to make it at least once a week, alternating pork and chicken. It's amazing and one of the best recipes I have found on this site!

Comments: I made this dish last night for my family. It was a huge hit. The chicken was cooked perfectly... very tender and juicy and the glaze was delicious. If you're making this dish, be careful with the all-spice, it can overpower the entire dish. I also found that we could have used a bit more glaze. There was enough to cover the pieces of chicken, but my family and I love to dip. It was easy enough though to make a little extra.

Comments: Being the amateur cook that I am, I wanted to fix something special for my wife for dinner. I found this receipe to be excellent (and so did my wife's co-workers). Being a rookie cook, I found that it did take me a little longer than the 15 minutes prep time indicated in the receipe, but the end results were excellent. Comments: I tried this recipie with my husband and kids and they loved the tenderness of the chicken breast. The flavour would of been alot nicer without adding the coffee, which I think was abit over bearing. Especially if your not really a coffee lover. I used Rum essence instead and again would taste just as nice without adding that as well.

Comments: I tried this, but I didn't read the part about cooking the sauce first. I marinated the chicken overnight and substituted coffee liquer (didn't have instant coffee). The flavor was excellent and the chicken very tender. Should be even better following directions! Sliced leftovers (heated) for a chicken salad (lettuce,tomator, onion, grated cheese) the next night!

Comments: I followed the recipe exactly except for the "all spice" which I didn't have. I made 2 times the sause because of what the other readers said. I made 4 chicken breasts, and had no extra sause. The dish was ok, nothing great, probably never make it again. My husband said it was pretty good and different. I served it with white rice, thinking I would have extra sause, but I didn't.

Comments: This is the first recipe I've tried from meals.com, and it won't be the last! My very picky husband loved it and now requests it at least once a week. I left out the coffee, and I had none in the house, but recommend using the rum - I think it gives it a little something extra. I also make a double recipe of the sauce as we like some extra with our rice. Yum!

Comments: I absolutely love this recipe and I make it all the time! It is easier to make than it initially seems. I leave out the rum and coffee in the glaze and it still tastes great. I also just bake the chicken for 30 minutes at 375 degrees instead of broiling it. I still turn it some during cooking to coat the under side and only broil it the last 5-7 minutes or so. It's also great to heat up some of the left over glaze to use as a dipping sauce for the chicken while eating. Yummy! My husband even likes this dish and he is very picky.

Comments: This chicken was really very tasty. I followed the instructions on the ingredients, but instead of messing with the broiler. I seasoned the chicken with the salt and pepper and put it in the oven, once cooked. I mixed the rest of the ingredients brown sugar, etc and mixed it all together and put it in a skillet to cook, once the sugar was caramelized and blended with the other ingredients, I coated the chicken in the sauce and cooked it for 1-3 minutes and served it. It was easier and pretty tasty.

Comments: Wow....my mom never likes what I cook but with this chicken, she as blown away. I used ginger powder instead of real chopped up ginger. I think that gives the sweeter, and essence of ginger to the chicken rather than the strong taste to real ginger. I trust meals.com whenever they say that the recipe is a 5 star : )

Comments: This was fun to try, but a little daunting if you are a beginner cook. Using the broiler and all the turning requires watching your dinner cook, so don't plan on leaving the kitchen for twenty minutes at least! I couldn't find pre-chopped ginger so I actually bought the root! It's a bit on the sweet side, but yummy over all...

Comments: I loved this chicken but I hate broiling and barbequeing meat. I put this chicken in the crockpot with 1/2 of the sauce and put in some water and let it cook. When it was done I glazed the chicken and put it in the oven for 10 minutes. Perfect! Moist but still well glazed.

Comments: My boyfriend and I tried this meal. It was really good. I'm going to back off a little on the 2 tsps. of chopped ginger, I'll only use 1 next time. We served it with steamed mixed veggies, using a hint of the brown sugar and glaze on the veggies, and put the chicken over pasta. We really enjoyed it.

Comments: This chicken tasted great once it was done, but in my opinion it was a lot of work for what it was. I really liked the sauce, and substituted vanilla for the rum and we served it with rice and veggies. My husband thought this recipe was just average, and I thought it was very tasty. If we make it again, I think we will put it on the grill instead of under the broiler. It would be nice to have a little extra sauce to pour over it once it was cooked, the sauce was sooo yummy!

Comments: What a breath of fresh air for chicken lovers. The only changes I made was using spiced rum and grilling the chicken (never have been a big fan of cooking under the broiler). I bet this would be just as good with chicken thighs. We always use chicken breasts that are pounded flat for even cooking. I served this with grilled zuchini and a black bean salsa. The ingredients for the salsa are: 1 can back beans drained, 1 can Mexicorn drained, 1/2 can diced tomatoes, 1/2 onion diced, 1/2 avocado diced, 1/2 nectarine diced, juice of 1/2 lime, splash of olive oil, mint and cilantro chopped and cumin & corriander. Next time I will try it over rice...maybe coconut rice?!

Comments: This recipe is wonderful. I made it using my "Show-Time" grill and it tasted great. I am not one to try lots of new recipes b/c it just seems that they never turn out quite right. Comments: Didn't have some of the ingredients so used Zesty Garlic ketchup for the plain, Spiced Rum, bottled lime juice, jarred minced ginger, and pumpkin pie spice. Grilled the breasts on an indoor grill used in the patio and it did very well. I did double the glaze recipe and may try it on pork tenderloin. Thanks again!!!!

Comments: I made this recipe one night & my family loved it! The dish is different than the usual middle of the week chicken dinner. The only thing is, maybe I have to get my broiler fixed because it was more crispy and darker on the outside that I thought it would be. All in all, a great taste & change from the norm.

Comments: This is wonderful. It was fun to make and the whole house smelled great. This is the second time I've made this, since after just a week my husband asked for it again. I had my kids to dinner and they said it was great. My only suggestion is make sure the chicken is done. It's hard to tell because of the color of the sauce so double check. I had to pop it in the micro for a few mintues to finish cooking.

Comments: I was tired of making lemon pepper chicken and was looking for a good and easy recipe since I usually don't have much time to cook. I made this recipe for myself, but once my roommates got a smell of it, they charged at it and said it was probably my best dish yet. As other writers have stated, you should double the recipe so that you enough sauce to glaze the chicken more than once on both sides. Also I made a few substitutions where I didn't have the ingredients and it still came out great: white rum instead of dark nutmeg instead of allspice vegetable oil instead of olive oil no ginger Guys you can really impress a lady with this one. All you need to know is how to turn on an oven.

Comments: I tried this dish for my wife for Valentines Day and it was absolutely the best chicken I have ever had! The flavor was amazing! She has never been one to try anything new and is very picky about what she eats but she loved it! I doubled the sauce measurements as suggested and had just the right amount. I am also not the most kitchen savy person in the world and it was some work but the results were 100% worth the little amount of time and effort needed! Comments: This chicken looks like something you would order from a high end restaurant! My husband was impressed with the appearance as well as the taste and I found a different way to cook chicken. The sauce was a little too tangy for me, but nothing that I cannot adjust over time. I will definitely make this recipe for my family again:)

Comments: This one caught my eye! It was a fabulous meal. Since others had recommended it, I did double the recipe for the sauce. I used powdered ginger, and I used 'best of the fryer cut up. Comments: Outstanding! The flavor is wonderful (a little sweet and tangy), and the chicken turned out so moist! Even my husband loved this, and he is very picky and hesitant to try any new or exotic food. I used one TBSP key lime juice instead of juicing a lime myself. We wish there had been more sauce though. Comments: I had a difficult time throwing this together, but I'm sure things will go more smoothly the second time through. Chopping the ginger and juicing the limes was particularly time consuming, and I think next time I will just use ginger out of a jar or something, and lime juice out of a bottle. My other problems mostly had to do with realizing I had to double the recipe half way through, figuring out my boiler, and putting on all the "reserved glaze" before I should have. On the whole, this shouldn't be too hard for a more experienced cook. The end result was great tasting and quite different from my average dinners, so I was well-rewarded for my trouble. The combination of ingredients does indeed sound odd but it works out in the end to produce a tangy flavor that's a little like sweet-and-sour sauce (though a bit more complex, I think). I was impressed with how tasty this was, especially for a dish that's listed as being particularly healthy. I'll make it again...but, as I said,

Comments: I made this dish last night and it was very tasty. It is a bit time consuming to make the sauce, but I think that the next time around, it'll go faster since I'll know exactly what I'll be doing. The sauce smells unpleasant while you are stirring it, and it doesn't look so pretty at first, either. But don't worry, after you have stirred it over the stove, it looks very nice. The smell is odd at first, but once you pour it over the chicken and it is cooked, it smells pretty good actually! It tastes a lot better than it smells though. The chicken came out very tender, juicy, and this recipe gave it a wonderful flavor. I doubled the recipe for the sauce and the garlic/oil/pepper seasoning that you rub into the chicken to give it more flavor. After broiling and turning the chicken according to the directions, I brought down the temp to 350, cut another slit throughout the middle of each chicken breast, put a piece of foil over the chicken, and baked for an additional 3-4 minutes to

Comments: I tried this one day and it was so good. Didn't take long at all and great for dinner with guests. It also has a wonderful color when you take it out the oven. Its great to prepare sauce & season chicken ahead of time, so you just have to pop in the oven and serve. Highly recommend this for your next dinner.

Comments: This recipe did not really take that much work and is very delicious. The only thing was, I could not find ginger root at my local grocery store, so I substituted ground ginger. The flavor was still very good and the chicken was so tender and juicy. This will definatley become a regular in our household.
