1
pound
pork tenderloin
1
teaspoon
vegetable oil
1/2
cup
NESTLÉ® CARNATION® Evaporated Fat Free Milk
2
tablespoons
Dijon mustard
2
to 3
green onions
, sliced

CUT pork into 1-inch-thick slices. Place pork between two pieces of plastic wrap. Flatten to 1/4-inch thickness using meat mallet or rolling pin. Season with salt and ground black pepper, if desired.
HEAT oil in large, nonstick skillet over medium-high heat. Add half of the pork; cook on each side for 2 minutes or until browned and cooked through. Remove from skillet; set aside and keep warm. Repeat with remaining pork.
REDUCE heat to low. Add evaporated milk; stir to loosen brown bits from bottom of skillet. Stir in mustard and green onions. Return pork to skillet. Cook for 1 to 2 minutes or until sauce is slightly thickened, turning pork to coat with sauce.

Comments: My family enjoyed this meal very flavorful and moist! If you want to try another way, i will mix and i eyeball though, but i mix, ketchup, mustard dash of worstershire sauce, and a tablespoon of brown sugar and coat the tenderloin and cook at 350 for and Hour and half to 45 mins depending on size. You get a mix of the sweet and tangy side. Enjoy. Loved your recipe

Comments: Sorry to say I was disappointed. After reading the reviews on this recipe, I decided to make it. I followed the recipe as written. I was shocked to see how awful and strong the creamy mustard sauce tasted when I sampeled it with a bite of pork loin. I'm not picky at all, but I'm glad I tried a bite before I put all the pork loin back into the sauce. I even attempted to put additonal evaporated milk to see if that would help but it was still awful. I do like mustard so that has nothing to do with it. I poured the sauce down the drain and came up with my own sauce then. When starting with pan dripping again, I added 1 tsp. of flour, I replaced the evaporated milk with 98% fat free chicken broth, left out the mustard, still put the green onions in as before. Let it thicken up some and put the pork loins back into it, then simmer a couple minutes. It was great. Will make it my way again.

Comments: I made this recipe tonight and it was delicious. I guess something in the evaporated milk made the pork very tender. I used fat free evaporated milk to cut down on the fat and very lean pork sliced thin. I also used just a regular onion chopped thinly and sauteed that with about a heaping tablespoon of minced garlic. This recipe is definately a keeper for this household.

Comments: At first my younger daughter thought the pork was too dry, but when we added the sauce she really liked it. I didn't tell her until after she ate all of it that it had mustard in it [she doesn't like mustard]. The only problem we had was that the sauce curdled a little when the pork slices were added to it. I think this could be solved by pouring the sauce over the slices rather than putting the slices in the sauce.

It's worth the few minutes it takes to pound out the meat because it cooks in EXACTLY the time specified. I loved that! Also be sparing with the salt. The mustard enhanced the salt flavor so it went further than I expected. Easy to prepare, cook and serve! Clean up isn't a problem either. Definitely an all around thumbs up!

Just about the most moist and tender pork we've had, and we eat a lot of pork tenderloin. I think it may be the 'flattening'. A spoonful of the sauce over the asparagus we had was a perfect complement. I'm doing this one for the second time tonight.

Comments: Pork Tenderloin with Creamy Mustard Sauce, I have used a variation on this. I cooked a pork roast and mixed the juice with canned cream of mushroom soup, canned mushrooms, condensed milk with the drippings from the roast, cilantro, powdered mustard, onion powder, salt and pepper. It makes an excellent, rich sauce tasty with rice or homemade egg noodles. Serve with spiced apple rings on the side and vegetable of choice.

Comments: I thought this recipe was good. It was easy to make and didn't take long. I found, however, that it lacked a little zip. It wasn't quite flavorful enough for me. I too, like a previous reviewer, added more mustard. The milk really dilutes the flavor of it. The 2nd day I added some grated parmesan cheese to the leftovers and that was good. It just needs a little extra something to push this dish over the top. Anybody got any ideas?

Comments: You might think that this recipe tastes as simple as the list of ingredients, but think again! This is one of my favourite pork recipes, and it is so easy to prepare. One tip: don't leave the sauce cooking in the pan for very long. It gets too thick and the flavour is lost. If you like mustard, don't be afraid to use more than it calls for in the recipe - I used two heaping tablespoons of whole grain mustard and it was perfect!

Comments: I had leftover pork tenderloin and was looking for something to do with it. Talk about quick and easy! I used onion instead of green onion and added a little extra evaporated milk to make more of a gravy to serve over rice. By the time the rice was done, so was the pork and sauce! It really was delicious!
