PORK CHOPS

packed brown sugar

tablespoon
freshly grated lime peel

tablespoon
crushed dried thyme
1
clove
garlic
, finely chopped

teaspoon
dry mustard

(1 1/2-inch-thick)
boneless pork chops
PINEAPPLE-CUCUMBER SALSA
1
can
(20 ounces)
pineapple tidbits
, drained

medium
cucumbers
, peeled, seeded and diced
2
tablespoons
chopped fresh mint
1/2
jalapeño
, seeded and finely chopped
1
tablespoon
packed brown sugar
1
tablespoon
grated fresh ginger
1
tablespoon
fresh lime juice



FOR PORK CHOPS:
COMBINE sugar, lime peel, thyme, garlic and mustard in small bowl; spread evenly on all sides of pork. Cover; let stand at room temperature for 1 hour or up to 4 hours in the refrigerator.
PREHEAT grill.
GRILL or broil pork, turning halfway through, for 15 minutes or until no longer pink in center. Serve with Pineapple-Cucumber Salsa.
FOR PINEAPPLE-CUCUMBER SALSA:
COMBINE pineapple, cucumbers, mint, jalapeño, sugar, ginger and lime juice. Cover; refrigerate for 4 to 24 hours. Makes about 3 cups.

Comments: I served this over angel hair pasta. It probably would have been better as a summer dish, but I just couldn't wait to try it! It was a wonderful blend of different flavors. I will definately make this again!

Comments: This recipe was very easy and very tasty! I used fresh pineapple instead of canned and the salsa came out wonderful! You can vary the hotness by adding more or less jalapeno (wear gloves when you work with peppers!). My ten-year-old even asked for more!
