Top Sirloin Steaks with Eggplant Relish

If you love eggplant, try this delicious eggplant relish served over steaks.

1 Japanese eggplant
1 medium red bell pepper
1 clove garlic , finely chopped
1 tablespoon chopped fresh cilantro
2 1/2 teaspoons balsamic vinegar
1/4 teaspoon lemon pepper
2 (about 2 pounds total) beef top sirloin steaks

PREHEAT broiler.

PLACE eggplant and bell pepper on rack on broiler pan. Broil, turning occasionally, for 8 to 10 minutes or until skins blister. Place in paper bag. Close; let stand until cool. Remove skins. Finely chop eggplant. Remove seeds and veins from pepper; finely chop.

COMBINE eggplant, bell pepper, garlic, cilantro, vinegar and lemon pepper in medium bowl.

PREHEAT large, nonstick skillet over medium heat for 5 minutes. Cook steaks, turning once, for 9 to 11 minutes for rare to medium.

CUT steaks into thin slices. Spoon eggplant relish over steak slices.

Comments: Before this delicious dish, I did not like any eggplant whatsoever. Now I enjoy it because of this great new recipe. I even added jalapenos to the salsa to really spice it up.

Comments: I really liked the salsa over the steak. I haven't had eggplant for a long time, but it really fit well into the salsa. I got my kids to try it and they weren't too sure about it.

Comments: Scale up a bit by adding a hot pepper in the salsa, can use any cut of steak, we had leftover ribeye that was medium rare and sliced thinly and heated over rice with this dish.

Comments: You can use baby eggplant if Japanese is not available, but avoid Chinese eggplant (which we usually enjoy) for this recipe. Simple to make, and great to eat!!
