Nonstick cooking spray
1/4 cup NESTLÉ® CARNATION® Evaporated Fat Free Milk
3 to 4 tablespoons Dijon mustard
1/4 cup plain, dry bread crumbs
1/4 cup (.75 ounce) BUITONI Refrigerated Freshly Shredded Parmesan Cheese
4 (about 1 1/4 pounds total) boneless, skinless chicken breast halves

PREHEAT oven to 475° F. Spray 13 x 9-inch baking dish with nonstick cooking spray.

COMBINE evaporated milk and mustard in shallow bowl. Combine bread crumbs and cheese in separate shallow bowl. Dip chicken into milk mixture, coating both sides, then into bread crumb mixture. Place in prepared dish.

BAKE for 15 to 20 minutes or until chicken is golden brown and no longer pink in center.

Comments: The first thing my wife said was "I don't like Dijon Mustard" Well she loved the chicken. Chicken was somewhat soggy on the bottom, next time I will put on a baking rack so the bottom can crisp up. Make extra. Really good the next day.

Comments: I fixed this recipe a few weeks ago and I loved it. It's only 5 points for weight watchers also so definitely a plus. My nine year old loved it. My picky three year old ate a little. My husband even ate it, but I didn't tell him it was low fat. I think next time I will try the Italian bread crumbs for a little extra flavor though. A+

Comments: This was very easy to prepare. I used 4 very thick chicken breasts and cut them in half. I also use Italian seasoned bread crumbs because I did not have plain bread crumbs. I think the heat was too high. I sprayed a glass pyrex 13x9 with Pam and most of my breading stuck to the pan. I also had the rack in the middle of the oven, I have an electric oven so I think next time I will bake at 400 for about 30 minutes. The 15 to 20 minutes time frame is probably for thin breasts. Family was pleased with overall taste and said they would eat this dish again. I also have two granddaughters 6 & 4 who said they enjoyed the meal.

Comments: This was good, however I used italian flavored breadcrumbs based on other reviews. I love dijon mustard, and the taste just didn't come through. I also agree, it would taste good with a mustard sauce as well. next time, plain breadcrumbs like the recipie says and I'll make extra liquid to use as a sauce.

Comments: I made this recipe for my boyfriend and myself one night because I was in the mood for something 'different'. My boyfriend is a very selective eater and although I do give him credit for venturing out and at least tasting new things, he had made it clear to me that he does not like chicken. Instead of full chicken breasts, I opted to use tenders. They came out beautifully. We made rice as a side dish which was a perfect accent. He loved the dish, and told me he wants it again. He actually wants me to make chicken again (in the form of tenders nonetheless), but still. Plus, it really was easy to make, the ingredients are easily affordable and it's perfect for college students that have small spaces to work with and not much money in the wallet.

Comments: I did try this recipe. It was easy and tasted good. Since it tasted kinda "bland" instead of plain bread crumbs I used Italian bread crumbs. Other than that I wouldn't change anything in this recipe. It goes real good with chicken flavored brown rice and Italian salad.

Comments: this chicken was very good, my husband and 2 year old loved, i am not a fan of mustard at all, but i enjoyed this and will make it again. i recommend marinating the chicken in the mustard/milk sauce for a couple of hours and once you bread the chicken spray the pan and the chicken with cooking spray it makes the chicken a little more crispy

I didn't care for the bread crumb coating - it was too bland and "heavy" for my taste. Next time, I will make the coating with panko bread crumbs and chopped pecans (perhaps add a touch of brown sugar). Overall, a recipe I will try again.

Comments: again i substituted fish fillets for the chicken, and i also used organic fat free milk in place of the evaporated milk and cracker crumbs instead of bread crumbs. it was a great dish, my family loved it. even my daughter ate it all and she's a very picky eater. i paired it with a salad and fake mashed potatos (cauliflower steamed, mashed and seasoned like potatos) and it was a hit. will be making this again.

Comments: And delicious as well. To suit the taste of my husband, who dislikes mustard, I halved the amount called for. In addition to his never suspecting the sleight of hand, he, as well as I, appreciated the success the coating had in keeping the chicken breasts moist. I monitored the baking at 350 degrees for an hour and increased the temperature to 375 for the final 15 minutes. It worked well with having the baked potatoes in the oven at the same time. Definitely a keeper!

Comments: WOW! This has been by far the easiest chicken recipe I've tried. The outcome was simply delicious. Very tender and juicy chicken. However, I made a few adjustments. First, I seasoned the chicken with a little bit of pepper, salt, and fresh lemon juice. I let that sit for about 2 hours in the fridge. Then, I added just a tiny squirt of lemon juice to the mustard and milk mixture. Fabulous flavor if you like chicken with lemon! I also substituted 3 cheese bread crumbs for the plain bread crumbs, and added italian seasoning to the crumbs. These were just some of my add-ins to suit my family's taste. Play around with this recipe... It is very versatile. Hope everyone enjoys as much as I did. Happy cooking!

Comments: I made this last night for the first time. The chicken was tender and very moist. I do recommend that you try to use chicken breasts of about the same size. I used a few small ones and a few big ones and the smaller breasts were done in about 20 minutes and the larger ones took about 35-40 minutes. I also used red pepper flakes and some garlic powder.

Comments: I always fry chicken, dipping it in egg and milk before the bread crumbs and spices. The Dijon mustard gives it a tangy zing that is so tasty and the parmesean makes it very different. Add to that how much easier it is to bake it instead of frying and you have a real winner. It's not quite as crispy as fried, but I'm sure it is much healthier and it is certainly a lot less messy. We loved it. I will use this recipe often but I will probably still add my usual spices in the future to make it seem more like our traditional home-cooked chicken.

Comments: Even my finicky 10 year old who seldom eats anything loved this chicken! We paired it with steamed veggies and rice pilaf and it made a great meal. Since I am pressed for time and like things very easy, I threw all the dry ingredients in a large resealable plastic bag and tossed the mustard drenched chicken that way. It saved a few minutes and gave us an even coating. The mix of parmesan cheese and dijon mustard is great. The chicken is moist and tender. It's a great alternative for my diabetic husband to plain chicken breats.

I had a lot of evaporated milk left over (used only 1/4 cup out of a big can); I used some of it in place of regular milk in the Lipton Pasta Sides (Parmesan noodles) that I made to go with this meal. It made the noodles creamier than usual.

The only reason I didn't give it 5 stars was because it doesn't say to turn the chicken half way through cooking which resulted in a very soggy underside. Perhaps I'll try to flip it next time and see if the results are a little better. Otherwise a fantastic recipe!

Comments: This is easy and tasty. Any mustard will do; flavored ones are very good. You could add a dollop of marmelade or peach preserves into the mustard as well. I used leftover cereal that had gone a bit stale in place of the breadcrumbs. (Not sweetened of course.) Just pound it in the sack the cereal came in to make crumbs.

I have never cooked a day in my life and I wanted to surprise my husband with a nice dinner so I decided to pick this receipe since it looked pretty self explanitory. Comments: Well. It was interesting. By all the reviews I read, I really didn't see the big deal. It was simple to make and didn't take too long to bake. Only problem was, it had a unique and funny taste to it. Now my Dad enjoyed it but I didn't. Maybe I should've used more Dijon and original bread crumbs. Anyway, if you're looking for an easy fast dish I recommend it. Maybe I'll make it again, we'll just have to see.

Comments: This is a wonderful, flavorful, easy chicken breast recipe. I used the seasoned bread crumbs for more flavor as some before me had suggested. Since I'm cooking for one I used 2 boneless, skinless chicken breasts and cut the Dijon and milk qunatities in half, but kept the breading the same. I also baked it in my toaster oven for 20-25 min. (after preheating) to avoid overheating the kitchen. I'll make this again and again!

I use more of the mustard & cheese than is suggested, adds to the flavor. Comments: I first tired this recipe with the chicken, it was very tasty. From past experence I have found that pork and chicken are interchangeable. I used butterfly chops cut into 2" wide strips. They were very juicy and full of flavor. I cooked for 15 minutes at 425. I also tried a parmesan blend called "Parm Plus", it's Parmesan, Basil, Parsley, and Garlic, I used it with the bread crumb mixture.

I tried it without saying a word, when they came back for seconds, they asked hey what is this ? It's really good. I knew then that I had found a winner. Comments: My Mom and I prepared this dish together. It was quick and easy, which is the way we like it. We used regular yellow mustard instead and it was just as good. We also used seasoned bread crumbs, which I think gave this recipe even more flavor. The only problem we had was that the bottom of the chicken was soft. My Mom and I thought we should use a cookie sheet next time to bake the chicken. Perhaps this might help keep the bottom of the chicken crispier. We were still very impressed with this recipe. It will definitely be a dinner we will prepare at least once a month.

Comments: This chicken dish was super simple and very good. Chicken came out moist and favorful. I had similar recipe but the bread crumbs would fall off--this didn't happen because of the thick consistency of the mustard. Definitely will make again--couldn't be easier.

Comments: This was an easy and fast recipe to make. It somewhat tasted like a "home made" shake and bake. I cooked it at 375 degrees instead of the 475 that the recipe said. The chicken turned out very moist. The first time I made it, I cooked it at the higher temp. and it was dry, I also sprayed it with butter flavor pam, and the topping was crisp and brown.
