Nonstick cooking spray
1 tablespoon extra virgin olive oil
2 1/2 cups grated zucchini
3/4 cup diced onion
2 cloves garlic , finely chopped
3/4 cup (2.25 ounces) BUITONI Refrigerated Freshly Shredded Parmesan Cheese
2 cups (16-ounce container) egg substitute
3/4 cup NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk

PREHEAT oven to 350° F. Spray 9-inch-square baking dish with nonstick cooking spray.

HEAT oil in large skillet over medium-high heat. Add zucchini, onion and garlic. Cook, stirring occasionally, for 5 minutes or until softened. Remove from heat. Stir in cheese.

BEAT egg substitute and evaporated milk in large bowl. Gradually stir in zucchini mixture one spoonful at a time so that the vegetables will not cook the eggs. Pour mixture into prepared baking dish.

BAKE for 30 to 35 minutes or until frittata is cooked through. Season with ground black pepper, if desired. Slice and serve.
